Vegan Pancakes:

1 1/4 C Flour
2 TBSP sugar
2 tsp baking powder
1/2 tsp salt
2 TBSP oil
1 1/2 C water
music: Circle Takes The Square (Savannah, GA Screamo)

Mix dry... then add wet. I put some cinnamon in the batch at the AYCE and some vanilla. Place on non-stick or lightly margarined pan. Make to the size desired and flip when you see plenty of bubble on surface of pancake. YUM!

Bisquits:

2C flour
1 TBSP baking powder
1-2 TBSP nutritional yeast
1 tsp salt
1/3 C oil
2/3 C soy milk
music: Jurassic 5

Mix dry... then add wet. Add flour if dough is too wet (it shouldn't be sticky at all). Pull off small sections of dough and form into shape desired. Bake at 375'F until golden brown on bottom of bisquit (10-15 minutes).

Gravy:

Nutritional Yeast
Margarine
Flour
salt
1 clove garlic
lots of pepper
garlic and onion granules (optional)
Water
music: Zegota

This is always an experiment that turns out good. Place a few TBSP (about 5)of margarine and melt in a saucepan (pot). Once melted add nutritional yeast (about 1/4 C) and flour (about 2 C). Add 3 C of hot water... and whisk! Add the rest of the ingredients and continue to whisk over medium flame. Add more flour until you reach a thick gravy-esque consistency.

Cinnamon rolls:

Dough:
1 TBSP active dry yeast
1/2 C warm water
3/4 C warm water
1TSBP sugar
3 C flour
1TBSP margarine
music: Bury Me Standing

Preheat oven to 350'F. Place active dry yeast, sugar, and 1/2 C water aside and allow yeast to express itself (takes about 5 minutes). Mix all dry ingredients and then wet. Punch the dough a lot. Add more flour if dough is sticky. Let it sit for 30 minutes with a damp cloth over bowl. This is usually when people start asking if they are done yet. Punch again- let sit for 15 minutes.

Insides:
a lot of margarine
sugar
cinnamon
music: End on End

Pull off about 1/2 the dough and roll flat in a rectangle-esque shape. Place a good amount of the softened margarine and sprinkle a bunch of cinnamon and sugar. Roll and cut into 1/2" pieces. Repeat with rest of dough. Place in the oven. I take them out when they get brown on the bottom and still super soft.

Black eyed peace

1 lb black eyed peas
.5 to 1 medium jalepeno (matters how wonderful you want it)
3 yellow onions (chopped)
salt, pepper, cumin, paprika, chilli powder to taste.
cayenne and onion/garlic granules to taste (optional)
MUSIC: The Broadways (it reminds me a Georgia)

Combine peas, pepper, onion in a sauce pan.
Add water and fill the pan.
Add seasoning as you like.
Bring to a boil.
Lower heat and simmer (at a low boil) until liquid is absorbed and peas are tender. If peas are still hard add more water as needed and continue cooking until peas are tender.

Collared greens

4-6 bunches of collared greens cleaned
1 large chopped onion
seasoning/salt to taste
1 bunch of green onions (optional)
black pepper to taste
7 cups of water
MUSIC: FIYA (gainsville, FL)

Lay collared greens on top of each other, (no more than 4 at a time) roll and then cut in half.
Cut even smaller if you have large leaves (be sure to remove stems or it will be bitter)
Put water, 1/2 onion, and seasons (cumin, paprika, cayenne, chilli powder, salt, pepper- add what you want) and let boil for 10 minutes.

Add greens and rest of onion... more salt and pepper to taste if desired. Rapidly boil for 45 minutes.
Reduce heat and continue to check for desired tenderness.
Serve with some green onions on top.

Cornbread

2 C flour
3 TBSP baking powder
1 tsp salt
2 C cornmeal
2 C soy milk
4 tsp arrowroot
4 tsp water
1/2 C maple syrup
1/2 C melted Margarine
Music: Earth Crisis

Pour root in cup with water and mix. Combine all dry ingredients. Then wet. mix. it will be clumpy. Put in big baking pan at 400'F for 20 minutes... do the toothpick/knife test to see if it is done. This is crazy good.

Nacho Cheese:

1 C nutritional yeast
1 C flour
1/2 stick margarine
8 oz salsa (fresh is best... you can use more)
paprika, chilli powder, cumin, salt, pepper, garlic/onion granules to taste about 1.5 tbsp each...less of chilli... more paprika
3-4 cups of water
music: Nina Simone

mix dry... add water and salsa and whisk. Bring to a boil like lava and add margerine... always whisk... ALWAYS WHISK!!!
